Salsifis Belgium


Salsify originates from Northern Africa, Southern Europe and Turkey. It is a biennial herbaceous plant that often reaches a meter high, with long narrow green and grey leaves.

Sensorial attributes

Salsify is cultivated from March till May in a deep, moist and loose soil. It is harvested from October to the end of winter.
It is traditionally harvested for roots and young shoots.
Salsify has a fine and sweet taste and some say its texture is close to that of an artichoke.

Salsify has been considered as a forgotten or old vegetable for years but recently its consumption has become more popular.

Quality label




1kg of salsify
30cl of light cream
1 glass of skimmed milk
2 tomatoes
4 slices of ham
Salsify and ham gratin
1 egg yolk
100g of grated cheese

Precook the salsify
Put it in a baking dish and sprinkle over with the ham cut into pieces
In a bowl, mix the cream, milk, egg yolk, salt and pepper
Pour this mixture over the salsify and ham
Cover with tomatoes cut into thin slices
Sprinkle with grated cheese and bake in a preheated oven, gas mark 7/8 for 20 minutes.
